Pepper Jelly Dressing:
3 Tbsp Pepper Jelly
2 Tbsp Olive Oil
1/8 tsp Salt
1/8 tsp Dijon Mustard
In a small bowl whisk together ingredients. Microwave for 30 seconds and allow to cool.
Toss 6 cups Spinach, 1 cup Caramelized Pecans, and shredded Parmesan cheese. Toss with dressing and serve.
