Bacon-Wrapped Teriyaki Chicken Skewers

This recipe came from Our Best Bites and it is YUMMY! Their recipe is more for a party where we have adjusted it for large dinner.

2 boneless skinless chicken breasts
About 8 oz. lean bacon, NOT thick-sliced (thick bacon is too hard to work with in this recipe)
1 large can pineapple chunks
Homemade Teriyaki sauce (recipe at bottom)
Kebab skewers or toothpicks
 
Use kitchen shears to cut the bacon slab in half.. Refrigerate until ready to use. Cut chicken into bite-sized pieces.

Drain the pineapple and set up a little work station with skewers, bacon, chicken, and a 9x13 baking dish. Wrap a piece of bacon around a chicken piece, add pineapple and onionand repeat until skew is full. Repeat until you run out of chicken. We ran out of bacon first and we did some plain chicken mixed into our skewers. Pour Teriyaki sauce over everything, reserving about 1/4 c., and marinate in refrigerator for at least 4 hours, no longer than about 8.
 
Preheat grill; when about 350-400 degrees, place skewers on grill and baste with reserved Teriyaki sauce. Cook about 7 minutes and flip skewers. Baste again and cook another 7 minutes.
 
Teriyaki Sauce

1 Tbsp. cornstarch
1 Tbsp. cold water
½ c. white sugar
½ c. soy sauce
¼ c. cider vinegar
1 clove garlic, minced
½ tsp. ground ginger
¼ tsp. black pepper

In a medium saucepan, combine sugar, soy sauce, vinegar, garlic, ginger, and black pepper. You can use either ground ginger as directed or about 1 1/4 tsp. of fresh ginger. Combine your ingredients in the saucepan and bring to a boil over medium-high heat. While sauce is heating, combine cornstarch and cold water. When sauce comes to a full boil, add cornstarch mixture and stir until sauce is thickened and bubbly. Remove from heat. You can store it in the fridge in an air-tight container for up to 2 weeks

Grilled Teriyaki Pork Chops

4 pork chops
2 Tbsp lime juice
¼ c soy sauce
1 Tbsp minced ginger
3 Tbsp minced shallots
1 ½ tsp brown sugar
2 Tbsp white cooking wine
2 garlic cloves

Mix all ingredients in a container for marinating and add pork. Marinade for 4-8 hours, flipping occasionally. Grill.

Flank Steak Marinade

This is the BEST meat recipe I have ever had. My Dad made it for us growing up and it was always the requested b-day dinner. Now its our Holiday dinners too since we love it so much!

½ tsp garlic salt
¼ c vinegar
1 c oil
½ c soy sauce
¼ c Lee and Perrin Worchester Sauce
1 tsp dry mustard
1 tsp salt
1 tsp pepper
2 cups of honey

Mix ingredients together in a marinade pan. Marinate flank steak for about 24 hours, flipping halfway through and then Barbecue.

Lime Grilled Chicken with Black Bean Sauce

3 Tbsp lime juice
1 can black beans
2 Tbsp olive oil
½ c orange juice
¼ tsp ground red pepper
2 Tbsp balsamic vinegar
4 garlic cloves, minced
¼ tsp salt
½ c red pepper, chopped
dash pepper
¼ c red onion, chopped
2 garlic cloves

Place first 4 ingredients in Ziploc bag and add 4 chicken breasts or 10 chicken tenderloins. Seal and marinate in refrigerator for about 4-8 hours. Remove chicken from bag and BBQ on the grill until done. Meanwhile bring 2 cups water in a small saucepan and add red pepper and onion. Boil for 1 minute, drain and set aside. Drain beans and add beans and the next 5 ingredients into a food processor and process until smooth. Place chicken on a plate and top with pepper mixture and then with black bean sauce.

Pork and Pineapple Kabaobs

The weather is getting warmer here and this was the perfect meal because it was almost completely cooked outside!

2 lb boneless pork chops, cubed
1 1/2 tsp brown sugar
1 1/2 tsp soy sauce
1 Tbsp orange juice
1 Tbsp dried onions
can of pineapple chunks
1 red bell pepper, cubed
1 onion sliced into chunks

Put first 5 ingredients in a bowl and marinate for 3 hours or so. Thread pork, peppers, onions, and pineapple onto skewers. Prepare grill and grill until pork is done basting with extra marinade. Serve over rice with soy sauce.
