My family loved this! Its kind of like beef stroganoff but its different and really delicious. Make sure you give the meat a good 8-10 hours to get really soft. We changed it up so here is how we did it.
1/2 cup all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
2 pounds beef sirloin tips (stew meat)
1/2 cup chopped green onions
1 can (10.5 ounce size) condensed beef broth
1 teaspoon Worcestershire sauce
2 teaspoons ketchup
1/4 cup white cooking wine
3 tablespoons all-purpose flour
egg noodles
Directions:
Combine 1/2 cup flour with the salt and pepper and toss with beef cubes to coat thoroughly. Place in crock-pot. Add green onions.
Combine with beef broth, Worcestershire sauce, cooking wine, and ketchup. Pour over beef and onions; stir well. Cover and cook on LOW setting for 8 to 12 hours. One hour before serving if you want to thicken it up pull about 1/3 cup juice from the crock-pot and mix with 1 Tbsp cornstarch. Mix well and add back into crock pot. Simmer until noodles are ready. Serve over well drained egg noodles.

Tater Tot Casserole
I got this recipe from Pam. This makes the kiddos happy and its yummy for Mom and Dad too. The best part is that if you keep the a spare bag of tots in the freezer its a great meal when you don't know what else to make. I like to make it early in the day and leave in the fridge until about an hour before we are ready to eat.
1 1/2 lbs ground beef
1 1/2 lbs ground beef
1/2 lg onion diced in processor
1 pkg or 1/4 c taco seasoning
2 cans of cream of chicken
2 cans of cream of chicken
1 can evaporated milk
1 bag frozen tater tots

Teriyaki Meatballs
I don't remember where I got this recipe but we really like it!
Meatballs:
1- 1 1/2 lbs ground beef
3/4 dry oatmeal
2 eggs beaten
2/3 c diced onion
1/2 c milk
1 tsp salt
1/2 tsp pepper
1 tsp Worcestershire sauce
I put this all in my kitchen aid and let it mix it so I don't have to use my hands. Place a large skillet on the stove and turn it on med-high. Make meatballs about 1 inch in diameter and place them in the saucepan and brown them really good on the outside. I do it until they are even starting to look a little burnt. When they are browned place them in a 9 x 13 pan and do this until all the meatballs are browned.
Sauce:
1/2 c brown sugar
1/4 c apple cider vinegar
1 tsp Dijon mustard
1/4 c BBQ sauce (for this recipe I prefer a sweeter BBQ sauce)
1 tsp Worcestershire sauce
Stir up sauce and it should be slightly thick. Pour over browned meatballs and gently turn meatballs over to coat them.
Bake in oven at 350 for about 15-20 minutes or until they are cooked all the way through. Serve over rice.

Macho Nachos
steak
Worcestershire sauce
chips
cheese, grated
green onions, diced
tomatoes, diced
sour cream
guacamole
In a small saucepan place your steak, cut into bite sized pieces and about 2 Tbsp Worcestershire sauce. Sprinkle with some garlic salt. Cook the steak slowly over low heat. If you heat it to quickly is will get tough. When steak is just done, drain off any remaining liquids.
On a cookie sheet spread out chips and load with grated cheese, green onions, tomatoes, and steak. Broil until cheese is all melted and serve with guacamole and sour cream!

Pedros Special
This recipe is from our Grandma Henderson
1 lb ground beef or turkey
¼ tsp oregano
1 chopped onion
1 to 2 Tbsp chili powder
1 clove garlic, minced
1 bag Fritos
1 can tomato sauce
grated cheddar cheese
1/3 can tomato juice
1 can kidney beans, drained
Brown meat, onions, and garlic. Stir in tomato sauce, tomato juice, oregano, and chili powder. In a casserole dish alternate layers of this mixture with layers of beans, cheese, and corn chips (ending in corn chips). Bake covered at 350° for 45 minutes and then 10 min uncovered.

French Dip Sandwiches

Roast Beef, sliced
Au jus packet
Cheese
Heat rolls in oven. Mix Au jus sauce according to directions and add roast beef to warm Au jus and let simmer on low for 5 minutes. Add 2-3 Tbsp of butter to a saucepan and let melt. Slice onion into thin rings and drop into melted butter and heat on high until onions become soft and brown. Place onions, beef, and cheese in rolls and dip in Au jus sauce.

Beef Stroganoff
This is my Mamas recipe and its the best around for beef stroganoff!
1 lb stew meat
1 c beef broth
1 Tbsp flour
1 c sour cream
½ tsp salt
¼ c dry white cooking wine
2-5 Tbsp butter
1 can cream of mushroom soup
1 small onion
1 Tbsp of Worcestershire sauce
1 clove garlic
Coat meat with flour and salt. Brown in pan with butter and add onion and garlic. Add remaining ingredients and simmer for 10 minutes. Serve over egg noodles or rice.
Beef Taco Bake
1 lb ground beef
½ c milk
1 can tomato soup
6 flour tortillas
1 c salsa
1 c grated cheddar cheese
Rip the tortillas into bit sized pieces and set aside. In skillet cook beef until browned, drain off fat. Add undiluted soup, salsa, milk, tortillas, and half of the cheese, mix. Spoon into a 2 qt shallow baking dish and cover and bake at 400ยบ for 30 minutes. Uncover and sprinkle with remaining cheese until melted.

Wet Burritos
Another great recipe from my sis in law Lisa!
Ground beef or chicken seasoned with taco seasoning (chicken in our favorite)
8 tortillas
1-2 c cheese
1 c sour cream
Rice a roni Spanish mix prepared
1 can refried beans
1 can green enchilada sauce
Spray a 9x13 pan with cooking spray and then place a small layer of enchilada sauce on bottom of pan. Take a flour tortilla and place a layer of beans, meat, rice, sour cream, and cheese. Fold ends in and roll then set in pan. Repeat with all 8 tortillas. Dump the remaining enchilada sauce over the top of burritos and bake at 350 for 20 minutes covered and then remove foil and bake for 10 more minutes or until slightly browned.

1 pound top round beef steak
1/4 c soy sauce
2 Tbsp sugar
1/4 c apple juice
2 Tbsp cornstarch
1 cup water
2 c fresh broccoli
4 Tbsp oil
2-3 cloves garlic
2 tsp sesame oil
Cut beef steak into thin strips, set aside. Combine soy sauce, sugar, water, juice, and cornstarch in small bowl and set aside. In large skillet stir fry broccoli with 2 Tbsp oil for about 2-3 minutes. Do not overcook. Set broccoli aside in a dish. Pour remaining oil into skillet and add beef steak and cook until well browned on all sides. Add garlic and cook until fragrant but not more than 1 min. Pour soy sauce mixture over meat and cook until slightly thickened. Stir in sesame oil. Remove from heat. Stir in broccoli serve over rice.
