Crust:
1 ¼ c butter
2 ¼ c flour
½ c powdered sugar
Filling:
4 eggs
4 Tbsp flour
6 Tbsp lemon juice
1 tsp baking powder
2 c sugar
For filling add dry ingredients to a small bowl and whisk together until combined. Add eggs and lemon juice and whisk slowly until just combined, do not mix it hard because putting air into it will make it come out weird. Im not kidding here folks, mix slowly and just until combined. Pour on top of hot crust. Bake for about 30-35 minutes. Allow to cool slightly and then dust with powdered sugar. This recipe can easily be cut in half and done in a 9x9 pan.
