Twice Baked Potatoes

4 med to lg baking potatoes
3 Tbsp butter
1/3 c sour cream
1/4 c bacon bits
3/4-1 C cheese
2-3 Tbsp milk
1/3 c green onions
1/2 tsp Lawry's seasoning salt

Bake potatoes in oven on 375 for about an hour. Its much better to do them in the oven since you want the skins to be kind of crispy. If you are crunched for time put them in the microwave first to give them a head start and then bake them.

I add the butter to my Kitchenaid while they potatoes are cooking to give it time to soften. When potatoes are soft to touch take out from oven and cut each in half. Scoop out the inside and place in mixer bowl. Add sour cream, butter (if you already didn't add it), and start mixer and see if you need to add a little milk to moisten in. Add remaining ingredients and let mix for about 20 seconds then stop mixer and stir by hand. Fill each potato shell with mixture until it is evenly distributed between potato skins. Place back in the oven for another 10-20 minutes depending on if you want the top to get a little crispy (which I highly recommend!)

ENJOY!!!! I did label this as a side dish but we sometimes will eat this as our main course.
